In most parts of the United States, those summer days come when it's
just too hot to cook anything, and no one in the family has the appetite
for a big heavy meal. On days like this, an appetizing snack, eaten
outdoors, makes a fine substitution for lunch or dinner.
Nutritionists and chefs agree that color has a lot to do with how
appealing a meal seems to us. Allow us to recommend our Summer Salsa
Recipe, guaranteed to perk up interest in food even on the hottest day
of the year.
Summer Salsa Recipe
Ingredients:
- 4 big beefsteak tomatoes
- 1/2 sweet red onion
- 1 pepper - bell, if you like it mild or roasted chile if you like
it spicy
- 2 Tablespoons chopped cilantro
- 2 Tablespoons balsamic vinegar
- Salt and pepper to taste
Put all of these ingredients in a blender or food processor, and just
give a couple of quick blends to the mixture, leaving the ingredients
fairly chunky.
Add corn kernels for a southwestern flair, or lemon or lime juice for
citrus lovers. Serve with tortilla chips, crackers, or pita bread.
